How To Make Chicken & Cherry Tomato Lentils

Ingredients
- 4 chicken breasts
- 2 cups cherry tomatoes
- 1 cup green lentils
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

In a large skillet, heat olive oil over medium heat.

Season the chicken breasts with salt, pepper, dried thyme, and paprika.

Add the chicken to the skillet and cook for 6-8 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook until onion is translucent and fragrant.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they start to burst.

Add the lentils to the skillet and stir to combine with the tomatoes and onion mixture. Cook for an additional 2-3 minutes.

Pour in enough water to cover the lentils, then bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender.

Return the chicken to the skillet and cook for an additional 5 minutes, until heated through.

Serve the chicken and cherry tomato lentils hot, garnished with fresh parsley.
