- 1/4 cup chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste

In a large bowl, combine the cooked rice, charred spring onions, sliced olives, and chopped parsley.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

Pour the dressing over the rice mixture and toss until well combined.
