- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste

In a large bowl, combine the grated carrots, sliced sugar snap peas, parsley, mint, and cilantro.
