Ingredients
- 2 blocks of halloumi cheese, sliced
- 2 tsp Cajun seasoning
- 1 can (15 oz) black-eyed beans, rinsed and drained
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- 2 avocados, pitted and mashed
- 1 tbsp fresh cilantro, chopped
- Salt and pepper to taste
Instructions

Preheat grill to medium heat.

Sprinkle Cajun seasoning on both sides of halloumi slices.

Grill halloumi for 2-3 minutes on each side until grill marks appear. Set aside.

In a large bowl, combine black-eyed beans, red bell pepper, red onion, jalapeno, and lime juice. Mix well and season with salt and pepper.

In a separate bowl, prepare guacamole by mashing avocados and mixing in cilantro. Season with salt and pepper.

Serve grilled halloumi with lime black-eyed bean salad and a side of guacamole.
