How To Make Blackberry Salad
This blackberry salad is filled with fresh berries and drizzled with a creamy apricot sauce. Whip up this unique and tasty salad in just 20 minutes!

Ingredients
- 4cupsmixed salad greens
- ½cupmixed herbs,mint, dill, cilantro, basil, parsley
- 1cupblackberries
- 2apricots,pitted, sliced
- 2corn ears,cooked, kernels sliced off the cobs
- 3small yellow beets,or 2 large, roasted
- ¼cupfeta cheese,crumbled
- ¼cupalmonds,toasted, sliced
For Dressing:
- 1large ripe apricots,or 2 small, pitted
- 2tbspolive oil
- 1tbspred wine vinegar
- 1tbsphoney
- kosher salt and pepper,to taste
- 2tsppoppy seeds
Instructions

Combine the greens, herbs, blackberries, apricots, corn, beets, feta, and almonds to a large bowl.
Dressing:

Place the apricots, olive oil, vinegar, and honey in the bowl of a food processor. Puree to a smooth dressing.

Season to taste with kosher salt and pepper, then stir in the poppy seeds.

Pour the dressing over the salad, then toss gently to coat.
