Ingredients
- 2 boneless, skinless chicken breasts, grilled and sliced
- 4 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1/2 cup of sliced cucumber
- 1/2 cup of sliced red onion
- 1 cup of croutons
- 1/4 cup of grated Parmesan cheese
- dressing:
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- 1 teaspoon of Dijon mustard
- Salt and black pepper to taste
Instructions

In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and croutons.

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper to make the dressing.

Pour the dressing over the salad and toss to coat.

Top the salad with the sliced grilled chicken and grated Parmesan cheese.
