Ingredients
- 1 cup barley
- 1/2 cup bulgur
- 2 cups water
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions

In a medium pot, bring water to a boil. Add barley and bulgur, reduce heat, cover, and simmer for 20 minutes or until grains are tender. Drain any excess water and let cool.

In a large mixing bowl, combine barley, bulgur, mint, parsley, dill, and chives.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

Serve chilled or at room temperature.
