How To Make Acini di Pepe Salad

Ingredients
- 1 cup Acini di Pepe pasta
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh basil, chopped
- dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Cook the Acini di Pepe pasta according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, and fresh basil.

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.

Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
