Ingredients
- 1.5 lbs turkey breast, boneless and skinless
- 1 cup fresh breadcrumbs
- 1/4 cup pine nuts
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Zest of 1 lemon
- Juice of 1 lemon
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- Olive oil
Instructions

Preheat the oven to 350°F (180°C).

In a bowl, combine the breadcrumbs, pine nuts, parsley, basil, lemon zest, lemon juice, garlic, salt, and black pepper.

Lay the turkey breast flat on a cutting board and season with salt and black pepper.

Spread the stuffing mixture evenly over the turkey breast, leaving a small border around the edges.

Carefully roll up the turkey breast, starting from one end, until it is a tight cylinder. Secure with kitchen twine.

Place the rolled turkey breast on a baking sheet and drizzle with olive oil.

Roast in the preheated oven for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).

Remove from the oven and let rest for 10 minutes before slicing.
