- 1.5 pounds of new red potatoes
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- Fresh parsley for garnish
Instructions

Preheat the oven to 425°F (220°C).

Wash and dry the new red potatoes, then cut them into quarters.

In a large bowl, combine the olive oil, garlic powder, dried thyme, salt, and black pepper. Mix well.
