How To Make Roast Pork Belly with Caramelised Peanut Sauce

Ingredients

  • 1.5 kg pork belly
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey
  • 1 tbsp Chinese five-spice powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup unsalted peanuts
  • 1/4 cup brown sugar
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1/4 cup chicken broth

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Score the pork belly skin diagonally, making shallow cuts.

  3. In a small bowl, mix together the soy sauce, hoisin sauce, honey, Chinese five-spice powder, salt, and black pepper. Rub this mixture all over the pork belly, making sure to get it into the cuts on the skin.

  4. Place the pork belly on a rack in a roasting pan and roast for 2 hours, or until the meat is tender and the skin is crispy.

  5. While the pork is roasting, heat a skillet over medium heat. Add the peanuts and toast them until golden brown. Remove from the skillet and set aside.

  6. In the same skillet, add the brown sugar and allow it to melt and caramelize. Add the vegetable oil, garlic, and ginger, and cook for 1-2 minutes until fragrant.

  7. Add the soy sauce, oyster sauce, rice vinegar, sesame oil, and chicken broth to the skillet. Stir well to combine and simmer for 5 minutes until the sauce thickens slightly.

  8. Remove the pork belly from the oven and let it rest for 10 minutes. Slice into serving pieces and serve with the caramelized peanut sauce, sprinkled with toasted peanuts.
