How To Make Roast Pheasant with Cider & Bacon

Ingredients
- 1 whole pheasant, about 2 lbs
- 4 slices of bacon
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of apple cider
- 1 cup of chicken broth
- 1 tbsp of fresh thyme leaves
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the pheasant with salt and pepper, both inside and outside.

Place the bacon slices on top of the pheasant, covering it completely.

In a roasting pan, add the chopped onion and minced garlic.

Place the pheasant on top of the onions and garlic.

Pour the apple cider and chicken broth into the pan.

Sprinkle fresh thyme leaves over the pheasant.

Cover the roasting pan with foil and place in the preheated oven.

Roast the pheasant for 1 hour, then remove the foil and continue to roast for another 30 minutes, or until the bacon is crispy and the pheasant is cooked through.

Once cooked, remove the pheasant from the oven and let it rest for 10 minutes before serving.

Serve the roast pheasant with the onions, garlic, and pan juices as a delicious sauce.
