Ingredients

  • 1 leg of lamb (approximately 3 pounds)
  • 4 cloves of garlic, minced
  • 1/4 cup of fresh watercress, finely chopped
  • 4 tablespoons of unsalted butter, softened
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, combine the minced garlic, chopped watercress, softened butter, salt, and pepper to make the watercress butter.

  3. Place the leg of lamb on a roasting rack in a roasting pan.

  4. Rub the leg of lamb all over with the watercress butter, massaging it into the meat.

  5. Sprinkle additional salt and pepper over the lamb if desired.

  6. Roast the leg of lamb in the preheated oven for approximately 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare, or 160°F (71°C) for medium.

  7. Remove the leg of lamb from the oven and let it rest for 10-15 minutes before carving.

  8. Carve the lamb into slices and serve with the pan juices.
