Ingredients
- 2 lbs lamb roast
- 1 cup dried apricots, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C).

In a bowl, mix together the chopped apricots, mint leaves, minced garlic, olive oil, salt, and pepper.

Cut a deep slit in the lamb roast and stuff the apricot and mint mixture into it.

Secure the opening with toothpicks or kitchen twine.

Place the stuffed lamb roast on a roasting pan and season with additional salt and pepper.

Roast in the preheated oven for 1 hour 30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove from the oven and let it rest for 10-15 minutes before slicing.
