How To Make Roast Chicken with Peppers & Feta

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Rinse the chicken and pat it dry.

  3. In a bowl, mix together the sliced peppers, crumbled feta cheese, olive oil, dried oregano, garlic powder, salt, and black pepper.

  4. Gently loosen the skin of the chicken and stuff the pepper and feta mixture under the skin, spreading it evenly.

  5. Place the stuffed chicken in a roasting pan and drizzle with a little olive oil.

  6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.

  7. Remove the chicken from the oven and let it rest for 10 minutes before carving.

  8. Serve the roast chicken with the peppers and feta stuffing, and enjoy!
