Ingredients

  • 1 whole chicken, approximately 4 lbs
  • 4 large potatoes, cut into chunks
  • 4 sprigs of fresh thyme
  • 1/2 cup maple syrup
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the chicken in a roasting pan and season it with salt, pepper, and half of the thyme sprigs.

  3. In a small bowl, mix together the maple syrup and olive oil.

  4. Pour the maple syrup mixture over the chicken, making sure to coat it evenly.

  5. Arrange the potato chunks around the chicken in the roasting pan.

  6. Sprinkle the remaining thyme sprigs over the potatoes.

  7. Cover the roasting pan with foil and place it in the preheated oven.

  8. Roast for 1 hour, then remove the foil and baste the chicken with the pan juices.

  9. Return the pan to the oven and roast for an additional 30 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.

  10. Remove from the oven and let the chicken rest for 10 minutes before serving.

  11. Carve the chicken into individual portions and serve with the roasted potatoes and thyme sprigs.
