Ingredients
- 4 chicken leg quarters
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups mashed potatoes
- 2 cups shredded cabbage
- 1 cup cooked diced carrots
- 1/2 cup diced onions
- 2 tbsp butter
- 2 tbsp vegetable oil
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the honey, Dijon mustard, olive oil, salt, and pepper.

Place the chicken leg quarters on a baking sheet and brush the honey-mustard mixture all over the chicken.

Roast in the preheated oven for 1 hour, or until the chicken is cooked through and the skin is crispy.

While the chicken is roasting, prepare the bubble & squeak. Heat the butter and vegetable oil in a large skillet over medium heat.

Add the diced onions and cook until translucent. Then add the shredded cabbage and diced carrots, stirring occasionally, until they are tender and lightly browned.

Add the mashed potatoes to the skillet and mix everything together until well combined. Cook for another 5 minutes, or until heated through.

Serve the honey-mustard roast chicken with a generous portion of bubble & squeak on the side.
