How To Make Herby Cheese Roast Chicken & Baked Tomatoes

Ingredients

  • 1 whole chicken, about 4 lbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh herbs (such as rosemary, thyme, and parsley), finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 large tomatoes, cut in half

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Rinse the chicken and pat it dry with paper towels.

  3. In a small bowl, mix together the Parmesan cheese, fresh herbs, garlic powder, onion powder, paprika, salt, and pepper.

  4. Rub the herb mixture all over the chicken, making sure to get it under the skin as well.

  5. Place the chicken on a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C).

  6. While the chicken is roasting, arrange the tomato halves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

  7. Place the tomatoes in the oven with the chicken for the last 20 minutes of the cooking time.

  8. Remove the chicken and tomatoes from the oven and let them rest for a few minutes before serving.

  9. Serve the roasted chicken with the baked tomatoes on the side.
