How To Make Cornish Hens with Scallion Butter and Lime
Dry rubbed with oregano and cumin, these tender cornish hens are roasted to perfection then topped with scallion-studded butter for a spice-rich bite.

Ingredients
- 4tbspbutter,at room temperature
- 1tspdried oregano
- 1tspcumin
- ½tspsalt
- fresh ground black pepper,as needed
- 2cornish hens,(about 1¼ lbs each)
- 1scallion,including green top
- lime wedges,for serving
Instructions

Heat the oven to 450 degrees F. In a small bowl, combine 2 tablespoons of the butter with the oregano, cumin, ¼ teaspoon of the salt, and ¼ teaspoon pepper.

Rub the mixture over the skin of the hens and arrange them, skin-side up, on a baking sheet. Roast in the upper third of the oven for about 20 minutes until golden and cooked through.

Meanwhile, combine the remaining butter with the scallion, the remaining salt, and ⅛ teaspoon pepper. When the hens are roasted, top with the scallion butter.

Serve with lime wedges. Enjoy!
