How To Make Butter-Basted Pork Loin with Stuffing Crust & Cheesy Polenta

Ingredients

  • 2 lbs pork loin
  • 1 cup breadcrumbs
  • 1 cup prepared stuffing
  • 4 tbsp butter
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • For the Cheesy Polenta:
  • 1 cup polenta
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the pork loin with salt, pepper, dried rosemary, and dried thyme.

  3. In a skillet, melt 2 tablespoons of butter over medium-high heat. Add the pork loin and sear on all sides until browned, about 5 minutes.

  4. Transfer the pork loin to a baking dish and dot with the remaining butter. Roast in the preheated oven for 60-70 minutes, until the internal temperature reaches 145°F (63°C).

  5. In a bowl, combine the breadcrumbs and prepared stuffing. Press the mixture onto the top of the pork loin, creating a crust.

  6. Return the pork loin to the oven and roast for an additional 10-15 minutes, until the crust is golden brown.

  7. Meanwhile, cook the polenta. In a saucepan, bring the chicken broth to a boil. Gradually whisk in the polenta and reduce the heat to low. Cook for 20 minutes, stirring occasionally.

  8. Remove the polenta from heat and stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

  9. Slice the butter-basted pork loin and serve with a side of cheesy polenta.
