Ingredients
- 3 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup chopped spring greens (such as spinach, kale, or chard)
- 1 cup diced mixed vegetables (such as carrots, bell peppers, and peas)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 4 large eggs, beaten
- Salt and pepper to taste
- Chopped green onions, for garnish
Instructions

Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the spring greens and mixed vegetables to the skillet and cook until tender, about 3-4 minutes.

Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.

Add the cooked jasmine rice to the skillet and toss everything together. Cook for an additional 2-3 minutes to heat through.

Stir in the soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste.

Remove from heat and garnish with chopped green onions.
