Ingredients
- 2 cups cooked rice
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen corn
- 1 can black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions

Heat olive oil in a large skillet over medium heat. Add onion, red bell pepper, jalapeno pepper, and garlic. Cook until vegetables are softened, about 5 minutes.

Add chili powder, cumin, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.

Add cooked rice, frozen corn, and black beans. Cook for another 5 minutes, stirring occasionally.

Remove from heat and stir in chopped cilantro and lime juice.
