Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1/4 teaspoon saffron threads
- 1 tablespoon butter
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup sliced almonds, toasted
- Salt and pepper to taste
Instructions

In a saucepan, bring the vegetable broth to a boil. Add the saffron threads and let it simmer for 5 minutes.

In a separate saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.

Add the wild rice to the saucepan with the onions and garlic. Stir well to coat the rice with butter.

Pour in the saffron-infused vegetable broth, bring to a boil.

Reduce heat to low, cover and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.

Fluff the rice with a fork and season with salt and pepper to taste.

Serve the saffron wild rice garnished with toasted sliced almonds.
