Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Rinse the quinoa under cold water and drain well.

In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.

Add the bell pepper, zucchini, and carrot to the saucepan. Cook for about 5 minutes, or until the vegetables are slightly softened.

Add the quinoa, vegetable broth, cumin, paprika, salt, and pepper to the saucepan. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

Fluff with a fork and garnish with fresh parsley before serving.
