Ingredients
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions

In a medium saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add the rice to the pot and stir to coat with oil. Cook for 1-2 minutes until the rice is lightly toasted.

Pour in the chicken broth, lemon juice, and lemon zest. Stir in oregano, salt, and black pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 15-18 minutes or until the rice is tender and liquid is absorbed.

Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.

Garnish with freshly chopped parsley and serve hot.
