Ingredients
- 500g lamb, diced
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tbsp vegetable oil
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 cup coconut milk
- 1 ripe mango, diced
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.

Add the diced lamb to the skillet and cook until browned on all sides.

Add the cumin powder, coriander powder, turmeric powder, and chili powder to the skillet. Stir well to coat the lamb with the spices.

Add the basmati rice to the skillet and stir to combine with the lamb and spices.

Pour in the coconut milk and add enough water to cover the rice. Season with salt to taste.

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.

Once the rice is cooked, remove the skillet from the heat and let it sit covered for 5 minutes.

Fluff the rice with a fork and gently stir in the diced mango.

Serve the Lamb, Coconut & Mango Pilau garnished with fresh cilantro.
