Ingredients
- 1.5 lbs turkey breast, diced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup frozen peas
- 2 cups chicken broth
- 1 cup long-grain rice
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions

In a large, deep skillet or paella pan, heat the olive oil over medium heat. Add the turkey breast and cook until browned on all sides. Remove from the pan and set aside.

In the same pan, add the onion, garlic, and bell peppers. Cook until the vegetables are softened, about 5 minutes.

Add the rice, smoked paprika, saffron threads, turmeric, salt, and black pepper. Stir to coat the rice and toast the spices for 2-3 minutes.

Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.

After 20 minutes, uncover the pan and stir in the frozen peas and cooked turkey. Cover again and cook for another 10-15 minutes, or until the rice is tender and the liquid has been absorbed.

Remove from heat and let the paella rest for 5 minutes. Sprinkle fresh parsley over the top for garnish. Serve with lemon wedges.
