Ingredients
- 2 cups cooked rice
- 2 eggs
- 1 cup frozen peas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp vegetable oil
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.

Add the curry powder, turmeric, cumin, and paprika to the skillet. Stir well to coat the onions and garlic with the spices.

Add the cooked rice and frozen peas to the skillet. Stir well to combine all the ingredients. Cook for 5 minutes, or until the peas are heated through.

Make a well in the center of the skillet and crack the eggs into it. Season with salt and pepper. Stir the eggs gently until they are just cooked, then mix them into the rice and peas.

Serve the Budget Kedgeree hot, garnished with fresh cilantro.
