How To Make Speedy Chorizo Ragu Lasagne

Ingredients
- 250g lasagne sheets
- 300g chorizo, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (400g) diced tomatoes
- 1 can (400g) tomato sauce
- 2 tsp dried oregano
- 1 tsp paprika
- Salt and pepper, to taste
- 200g grated mozzarella cheese
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 180°C (350°F).

Cook the lasagne sheets according to package instructions. Set aside.

In a large skillet, cook the chorizo over medium heat until slightly crispy. Remove from the skillet and set aside.

In the same skillet, add the onion, garlic, and red bell pepper. Cook until softened.

Add the diced tomatoes, tomato sauce, dried oregano, paprika, salt, and pepper. Stir well to combine.

Simmer the sauce for 10 minutes, allowing the flavors to meld together.

Layer the cooked lasagne sheets, chorizo, and sauce in a baking dish. Repeat until all the ingredients are used, ending with a layer of sauce on top.

Sprinkle the grated mozzarella cheese over the top.

Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Garnish with fresh basil leaves before serving.
