Ingredients
- 8 ounces of spaghetti
- 2 tablespoons of olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 ounces of chorizo, sliced
- 1 teaspoon of smoked paprika
- 1 can (14 ounces) of diced tomatoes
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the bell peppers, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the chorizo and smoked paprika to the skillet. Cook for another 5 minutes, until the chorizo is slightly crispy.

Stir in the diced tomatoes and season with salt and pepper. Simmer for 10 minutes to allow the flavors to meld together.

Add the cooked spaghetti to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes, until everything is heated through.

Serve the spaghetti in bowls, garnished with fresh parsley.
