How To Make Spaghetti with Pea & Mint Pesto

Ingredients
- 12 oz spaghetti
- 1 cup frozen peas, thawed
- 1/4 cup fresh mint leaves
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions

Cook spaghetti according to package instructions. Drain and set aside.

In a food processor, combine peas, mint leaves, Parmesan cheese, garlic, and olive oil. Blend until smooth.

Season with salt and pepper to taste.

In a large mixing bowl, toss the cooked spaghetti with the pea and mint pesto until well coated.

Serve immediately and garnish with additional grated Parmesan cheese if desired.
