How To Make Sausage & Winter Greens Cannelloni

Ingredients
- 8 cannelloni tubes
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 4 sausage links, casings removed
- 2 cups winter greens (such as kale or Swiss chard), chopped
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C). Cook the cannelloni tubes according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the sausage meat to the skillet and cook until browned and cooked through, breaking it up into small pieces with a spoon.

Stir in the chopped winter greens and cook until wilted.

In a bowl, mix together the cooked sausage and greens mixture with the ricotta cheese. Season with salt and pepper to taste.

Spoon the sausage and greens mixture into the cannelloni tubes and place them in a baking dish.

Pour the marinara sauce over the filled cannelloni tubes, making sure they are completely covered.

Sprinkle the shredded mozzarella cheese on top of the sauce.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.

Serve the sausage and winter greens cannelloni hot and enjoy!
