Ingredients
- 12 oz rotini pasta
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup tomato sauce
- 1/4 cup grated Parmesan cheese
- Fresh basil, chopped (optional)
Instructions

Preheat the oven to 400°F.

Toss the sliced peppers, zucchini, squash, onion, and garlic in olive oil and season with salt and pepper.

Spread the vegetables in a single layer on a baking sheet and roast for 20-25 minutes until tender and caramelized.

Cook the pasta according to package instructions until al dente.
