How To Make Rigatoni with Spiced Prawns, Tomatoes & Chorizo

Ingredients
- 400g rigatoni
- 300g large prawns, peeled and deveined
- 150g chorizo, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 400g canned diced tomatoes
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Cook the rigatoni according to package instructions. Drain and set aside.

In a large pan, heat some oil over medium heat. Add the chorizo and cook until crispy. Remove from the pan and set aside.

In the same pan, add the diced onion and minced garlic. Cook until softened.

Add the prawns, smoked paprika, and chili flakes. Cook until the prawns turn pink and are cooked through.

Stir in the canned diced tomatoes and cook for a few minutes until heated through.

Add the cooked rigatoni to the pan and toss to coat evenly with the sauce.

Season with salt and pepper to taste.

Serve the rigatoni with spiced prawns, tomatoes, and chorizo in bowls, garnished with fresh parsley.
