How To Make Ricotta, Broccoli & Lemon Penne

Ingredients
- 8 oz penne pasta
- 2 cups broccoli florets
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- zest of 1 lemon
- juice of 1 lemon
- salt and pepper to taste
- grated Parmesan cheese for garnish
Instructions

Cook the penne pasta according to package instructions. In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the cooked pasta and broccoli to the skillet. Stir in the ricotta cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.

Cook for an additional 2-3 minutes until the cheese is melted and the sauce is heated through.

Serve hot with grated Parmesan cheese on top.
