How To Make Pesto & Courgette Pasta Bake

Ingredients
- 300g pasta (penne or fusilli)
- 2 medium courgettes, thinly sliced
- 4 tbsp of pesto
- 200g mozzarella cheese, grated
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions

Cook the pasta according to package instructions. Drain and set aside.

Preheat your oven to 180°C (350°F).

In a large skillet, sauté the courgette slices with a little olive oil until tender. Remove from the heat and set aside.

In a large bowl, mix together cooked pasta, pesto, sautéed courgettes, mozzarella cheese, and Parmesan cheese. Season with salt and pepper.

Transfer the mixture to a baking dish and spread it evenly.

Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.

Remove from the oven and let it cool for a few minutes before serving.
