Ingredients
- 1 pound of penne pasta
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 4 cups of fresh spinach
- 1 cup of ricotta cheese
- ½ cup of grated parmesan cheese
- Salt and pepper, to taste
Instructions

Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and cook, stirring frequently, for 1-2 minutes.

Add the fresh spinach to the saucepan and cook until wilted, about 2-3 minutes.

Add the cooked penne pasta to the saucepan and stir to combine.

Add the ricotta cheese and grated parmesan cheese to the saucepan and stir until the cheese has melted and the pasta is coated in the cheese.

Season with salt and pepper, to taste.
