How To Make Pappardelle with Beef

Ingredients
- 1 lb beef stew meat, cut into cubes
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 cup red wine
- 2 cups beef broth
- 2 cups tomato sauce
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper to taste
- 1 lb pappardelle pasta
- grated Parmesan cheese for serving
- fresh parsley for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.

In the same pot, add the onion, garlic, carrot, and celery. Cook until the vegetables are tender.

Add the red wine and cook for 2 minutes, scraping the bottom of the pot to release any browned bits.

Return the beef to the pot and add the beef broth, tomato sauce, tomato paste, oregano, basil, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1-2 hours, until the beef is tender and the flavors are well combined.

While the beef is simmering, cook the pappardelle pasta according to package instructions. Drain and set aside.

Serve the beef and sauce over the cooked pappardelle pasta. Sprinkle with grated Parmesan cheese and garnish with fresh parsley.
