Ingredients
- 1 cup orzo
- 1 cup rice
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions

Cook the orzo and rice according to package instructions. Set aside.

In a large skillet, heat the olive oil over medium heat.

Add the onion and garlic and cook until softened, about 3 minutes.

Add the carrot, bell pepper, and zucchini. Cook for another 5 minutes until vegetables are tender.

Stir in the dried oregano, dried basil, salt, and black pepper.

Pour in the vegetable broth and bring to a simmer.

Add the cooked orzo and rice to the skillet. Stir to combine everything.

Cook for another 5 minutes, allowing the flavors to meld together.

Remove from heat and sprinkle with grated Parmesan cheese.

Garnish with fresh parsley before serving.
