Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 8 oz penne pasta
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach
  • Parmesan cheese, for serving

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the minced garlic and diced onion. Cook until the onion is soft and translucent, about 2-3 minutes.

  4. Pour in the diced tomatoes (including the juice) and add the dried basil, dried oregano, salt, and black pepper. Stir well to combine.

  5. Add the cooked penne pasta and cooked chicken back to the skillet. Stir in the fresh spinach and cook for an additional 2-3 minutes, until the spinach wilts.

  6. Remove from heat and serve hot, garnished with Parmesan cheese.
