How To Make Lentil & Lemon Fettuccine

Ingredients
- 8 oz fettuccine pasta
- 1 cup cooked lentils
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, zest and juice
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Cook the fettuccine pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the cooked lentils to the skillet and stir to combine with the garlic.

Add the cooked fettuccine pasta to the skillet and toss to combine with the lentils and garlic.

Squeeze the juice of the lemon over the pasta and lentils. Add the lemon zest and grated Parmesan cheese. Season with salt and pepper to taste.

Cook for an additional 2-3 minutes, until everything is heated through.

Serve the lentil and lemon fettuccine topped with fresh parsley for garnish.
