How To Make Gnocchi alla Romana

Ingredients
- 2 cups semolina
- 2 cups milk
- 1 cup Parmesan cheese, grated
- 2 eggs
- 4 tbsp butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a medium saucepan, bring the milk and salt to a boil. Gradually whisk in the semolina.

Continue to cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan. Remove from heat and let cool slightly.

Beat the eggs in a separate bowl, then stir them into the semolina mixture along with the Parmesan cheese. Season with salt and pepper.

Spread the mixture evenly onto a greased baking sheet. Using a round cookie cutter or glass, cut out individual gnocchi.

Dot each gnocchi with a small piece of butter and sprinkle with additional Parmesan cheese.

Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, or until golden and crispy.

Serve the gnocchi alla Romana hot, garnished with fresh parsley.
