How To Make Gnocchi alla norma

Ingredients
- 2 large eggplants
- 1/4 cup olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 lb potato gnocchi
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions

Preheat the oven to 400°F. Slice the eggplants into 1/4 inch thick rounds and place them on a baking sheet. Brush both sides with olive oil and season with salt and pepper. Bake for 20-25 minutes, or until golden brown. Set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.

Stir in the crushed tomatoes, dried oregano, salt, and pepper. Simmer for 10 minutes.

Meanwhile, bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions, then drain.

Add the baked eggplant slices to the tomato sauce and simmer for an additional 5 minutes.

Stir in the cooked gnocchi and toss to coat in the sauce.

Serve hot, garnished with grated Parmesan cheese and fresh basil.
