How To Make Fusilli with Kale and White Bean Sauce
A hearty vegetarian pasta dish with a creamy white bean sauce and healthy kale.
Serves:
Ingredients
- 1 pound fusilli pasta
- 1 bunch kale, stems removed and leaves chopped
- 1 can (15 oz) white beans, drained and rinsed
- 2 garlic cloves, minced
- 1/2 cup vegetable broth
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

While the pasta cooks, heat the olive oil in a large pan over medium heat.

Add the garlic and cook until fragrant, about 1 minute.

Add the kale and cook until wilted, about 3-4 minutes.

Add the white beans and vegetable broth, and simmer for 5 minutes.

Add the parmesan cheese and stir until melted.

Drain the pasta and add it to the pan with the sauce. Toss until the pasta is coated.

Season with salt and pepper to taste.
