How To Make Five-Veg Lasagne Recipe

Ingredients
- 9 lasagne sheets
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup spinach leaves
- 1 can (400g) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 cups grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions

Preheat the oven to 180°C (350°F).

Cook the lasagne sheets according to the package instructions.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the red bell pepper, zucchini, mushrooms, and spinach to the skillet. Cook for about 5 minutes or until the vegetables are tender.

Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes.

In a baking dish, layer the lasagne sheets, vegetable mixture, and mozzarella cheese. Repeat the layers until all the ingredients are used, ending with a layer of mozzarella.

Sprinkle Parmesan cheese over the top.

Bake in the preheated oven for 30 minutes or until the cheese is golden and bubbly.

Let it cool for a few minutes before serving.
