How To Make Easy Mexican Chicken Spaghetti Recipe

Ingredients
- 8 oz spaghetti
- 2 cups shredded chicken
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.

Add the diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper to the skillet. Stir to combine and let simmer for 10 minutes.

Add the shredded chicken to the skillet and stir until heated through.

Add the cooked spaghetti to the skillet and toss to coat in the sauce.

Sprinkle the shredded cheddar cheese over the top and cover the skillet with a lid. Let cook for 5 minutes, or until the cheese has melted and the spaghetti is heated through.

Serve the Mexican chicken spaghetti hot, garnished with fresh cilantro.
