How To Make Courgetti with Chilli, Lemon, Ricotta & Mint

Ingredients
- 4 large courgettes (zucchinis), spiralized
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 red chili, thinly sliced
- Zest and juice of 1 lemon
- 200g ricotta cheese
- Handful of fresh mint leaves, chopped
- Salt, to taste
Instructions

Heat the olive oil in a large pan over medium heat. Add the garlic and chili and cook for 1 minute.

Add the spiralized courgettes and cook for 3-4 minutes, until tender but still slightly crisp.

Remove from heat and stir in the lemon zest, lemon juice, and a pinch of salt.

Divide the courgetti onto plates and top with dollops of ricotta cheese.

Sprinkle with chopped mint leaves and serve immediately.
