How To Make Chorizo & Pepper Lasagne

Ingredients
- 9 lasagne sheets
- 1 pound chorizo sausage, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the sliced chorizo and cook until browned, about 8 minutes.

Stir in the bell peppers and cook for an additional 5 minutes until slightly softened. Season with salt and pepper to taste.

Spread a thin layer of marinara sauce in the bottom of a baking dish.

Place a layer of lasagne sheets on top, followed by a layer of the chorizo and pepper mixture. Sprinkle with mozzarella and Parmesan cheese. Repeat the layers, finishing with a layer of cheese on top.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Let the lasagne cool for a few minutes before serving. Garnish with fresh basil leaves.
