How To Make Chorizo & Chilli Pepper Pasta

Ingredients
- 8 oz (225g) chorizo sausage, sliced
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 fresh red chili peppers, seeds removed and sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup (120ml) chicken broth
- salt and pepper to taste
- 12 oz (340g) pasta of your choice
- grated Parmesan cheese for serving
- fresh basil leaves for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy. Remove from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and sliced chili peppers. Cook until the onions are translucent and the peppers are softened.

Add the diced tomatoes and chicken broth to the skillet. Season with salt and pepper to taste. Cook for 10 minutes, allowing the flavors to develop.

Meanwhile, cook the pasta according to the package instructions until al dente. Drain and set aside.

Return the cooked chorizo to the skillet with the tomato sauce. Stir to combine.

Add the cooked pasta to the skillet and toss until well coated with the sauce.

Serve the Chorizo & Chilli Pepper Pasta with grated Parmesan cheese and garnish with fresh basil leaves.
