How To Make Anytime Pesto & Prawn Pasta Salad

Ingredients

  • 250g pasta
  • 200g prawns, peeled and deveined
  • 1/4 cup pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup pine nuts, toasted
  • 2 cups arugula
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat some oil and cook the prawns until pink and cooked through. Remove from heat and set aside.

  3. In a large bowl, combine the cooked pasta, cooked prawns, cherry tomatoes, black olives, pine nuts, and arugula.

  4. Add the pesto to the pasta mixture and toss until well coated.

  5. Season with salt and pepper to taste.

  6. Serve the pesto and prawn pasta salad chilled or at room temperature.
